Here’s a short and sweet banana pancake recipe for an equally short and sweet morning meal prep. Takes about 15 minutes to assemble and cook. With maple syrup as an optional addition, it tastes delicious!
Ingredients:
- 1 banana
- 1/3 cup of pancake mix (gluten-free was used here)
- 1/3 cup of oat milk (to make it lactose-free)
- 1/8 cup of liquid eggs (for the cholesterol-conscious)
- 1/8 tsp of cinnamon
- A splash of vanilla extract
Mix everything together and fry 2-3 pancakes at a time on an oil-covered pan until each side of each pancake is a golden-brown color. Makes about 6 pancakes.
